The University of Arizona’s LEAF program- Linking Edible Arizona Forests – estimates the main campus has about about 8,000 mature trees of which nearly 25% have edible qualities such as fruit, seeds or nuts. LEAF is working with Iskashitaa Refugee Network and other entities on a program to harvest as much food as possible so it can be used by the community at large and the university. So far this fall, volunteers have collected pomegranates, calamondin limes and olives. This is important because it will save millions of fruit in southern Arizona from being thrown out or composted instead of being consumed.
