Dining With the Chef

In this episode, chef Saito makes sukiyaki, a popular Japanese dish known around the world. He prepares his own take on two different dips for the sukiyaki: egg and kudzu starch sauce. For a side dish, he works with cucumber and wakame seaweed. Chef Saito also talks about Japanese salads and vinegar-seasoned items, which go wonderfully with meat or fried dishes.
