There have been numerous efforts across the country to solve the problem of food waste. One new technique that is gaining momentum is called upcycling which takes edible food waste and creates nutritious alternatives while reducing the greenhouse gases generated by food loss and waste. NewsHour Weekend Special Correspondent and NPR Food and Health Correspondent Allison Aubrey reports.
