At New Hope Plantation, Chef Folse prepares Smothered Rabbit with Mushrooms, a combination of rabbit, onions, celery, bell pepper, garlic, tomatoes and mushrooms. He concludes with Rabbit, Oyster, and Andouille Gumbo.
